<p><strong>Mushroom Crust Pizzas</strong><br />
6 large mushroom caps, stems removed<br />
1 cup organic tomato sauce (We used Newman&#8217;s Own)<br />
1 cup whole milk mozzarella shredded<br />
Slices of pepperoni</p>

<p>Pre-heat oven to 350* F<br />
Line a baking sheet with parchment for easy clean up.<br />
Place mushrooms top down on sheet and add sauce to each cap.<br />
Place desired cheese and pepperoni on top of sauce.<br />
Place in oven for roughly 12-15 min or until cheese is lightly browned and mushrooms look cooked through.<br />
Allow to cool, eat with knit &#038; fork with a side salad of rich greens and protein.</p>

<p>Modifications: Melissa added a teaspoon of whipped cream cheese to the spinach and cheese stuffing. Also, we did not pound out the chicken, rather we butterflied it instead. We cooked it at 400* for about 40 minutes, which is when the chicken was done perfectly.</p>
<p><strong>Weaving</strong> will return next week! We completely forgot that segment!</p>

<p><strong>Ingredients:</strong><br />
1 can of black beans, rinsed<br />
1/2 medium red onion, diced<br />
1 spicy pepper of your choice, seeded and chopped<br />
1 can corn, drained<br />
1/2 medium red pepper, seeded and chopped<br />
1/2 cup Wish Bone Robusto Italian Dressing<br />
Optional: Juice of 1 lime, diced avocado</p>
<p>Mix all ingredients, chill and allow to marinate for an hour. Serve with grilled chicken, fish or steak. Great also over salad greens.</p>

<p><strong>Ingredients:</strong><br />
One large butternut squash peeled, cubed<br />
Large sweet onion, sliced<br />
Parchment paper<br />
Baking sheet<br />
Sharp chef&#8217;s knife<br />
Large Bowl<br />
Sauce pan<br />
Olive oil for roasting<br />
Salt &amp; pepper<br />
Garlic Powder<br />
Nutmeg<br />
Chicken or veggie stock (we prefer organic)<br />
Light cream<br />
Immersion blender or regular blender</p>

<p><strong>Set</strong> your oven to 400*. Place parchment paper on your baking sheet. In the large mixing bowl place the squash with the onion. Coat with olive oil, toss and then add salt, pepper, and garlic powder. Place in single layer onto baking sheet and place in over for 45 minutes to one hour. The squash should be cooked through and lightly browned. Remove baking sheet form oven and turn oven off. Place squash and onions into sauce pan with about 2 cups of chicken stock (enough to cover). Allow to simmer for about 15-20 minutes. Remove from heat. Add about 1/2 of light cream and nutmeg. Using an immersion blender or kitchen blender process until smooth. Serve with a green salad. Stores and reheats beautifully!</p>
