“What’s on your plate?” - NEW SEGMENT!
This week we’d like to highlight Melissa’s Black Bean Salad


1 can of black beans, rinsed
1/2 medium red onion, diced
1 spicy pepper of your choice, seeded and chopped
1 can corn, drained
1/2 medium red pepper, seeded and chopped
1/2 cup Wish Bone Robusto Italian Dressing
Optional: Juice of 1 lime, diced avocado

Mix all ingredients, chill and allow to marinate for an hour. Serve with grilled chicken, fish or steak. Great also over salad greens.

    Is it pathetic that I’m totally counting down the days until Rhinebeck? We can’t wait to hang out with you two! Watching you guys cracks me up because it’s so much like me and Justin. I’m pretty sure our marriage language is sarcasm. I’m going to make sure Justin knits something fancy pants for Rhinebeck to wear with his anniversary t-shirt ;) Another great episode! BTW, Justin totally felt like you should have played a bigger violin for Sean and his cold. Men!
